    Default Cooking with MellowYellow, MFP, and Inky!

    I'm sure many of us had heard the expression, "Ride to eat", and I'm sure for many of us, that is an excuse to jump on the motorcycle and go. My personal figure does nothing to dispel that motto in our house...lol.
    Randall is in cooking school, I keep hearing about Charles in the kitchen, Alexander loves to bake and cook and I'm in the kitchen right now. So what the hell, we need some biker receipes around this joint!

    I'll start with what's in the oven baking for this morning.

    Peach Cakes.


    My family has some major food allergies and we can't cook with most of the normal stuff any more. That has led us to a Vegan diet. We add meat where we want............we just don't add eggs or cow milk or cheese to anything. Needless to say, it's been a very boring diet for a long time. But thank goodness for experimental cooking and grocery stores like Olivers and Whole Foods. I know they can be expensive, but they carry powdered Goat's milk and when I want to make a roux....well, I'm ready in minutes!

    Enough rambling


    This is a modified Betty Crocker receipe

    3 cups flour
    2 cups sugar
    1 tablespoon baking powder
    1 1/2 cups of Almond milk
    1/2 cup margarine
    1 1/2 teaspoons of vanilla
    1 cup of canned peaches

    Fill a one cup measuring cup with the peach slices. If there's juice in there...good.
    Add that to your mixer. Add the stick of butter, add the sugar. Cream this mixture. Beat that sucker! Add the vanilla. Add the milk and mix on medium for a bit. Add the flour and baking powder. Mix well, but don't kill the gluten. Alton Brown does a great show on Good Eats about gluten...I highly recommend finding it on youtube and watching why you don't overbeat your flour mixtures.

    We like to make things in our muffin pans. Grease those babys up with the spray Pam. I use a half cup measuring cup to spoon out the mixture into the pans. Cook at 350 degrees for 35 minutes and then check with a tooth pick after that to see if they are done all the way thru. Cool on a rack for a few hours or eat when you can handle holding them!

    Great way to have breakfast out in the middle of nowhere...open up the tank bag and pull our your vegan peach muffin.

    Been a while since I have been trolling around these parts but I like this new thread!!!! Hell it's food and motorcycle related. If cookies are made then form them into wheels and eat them. That should make people happy.

    I am starting at the gym on Monday and changing my ways to reduce weight, increase horsepower all without spending too much money on carbon fiber and race fuel

    Not being the best cook but will give anyone a run for their money eating I will be following this thread.

    I with you Sam! I need to do the say, every 7 lbs lost adds a 1 horsepower! I belong to planet fitness, but haven't come in a few years.. hell I need help..

    Default Black Berry cobbler

    Awesome Idea. Sorry i did not post sooner. I usually dont scroll down that far.


    Here is my cobbler receipt.

    This is a cheater receipt cause it uses Bisquick
    Batter/topping
    1c Bisquick (+ a bit more to taste)
    1/4 c sugar
    1/2 sticker butter melted
    1/4 c water
    1/2 tsp cinnamon or to taste

    Crust
    1 package graham crackers
    1/2 stick butter melted
    1/4 c sugar(or slightly less)

    Filling
    2 c (+/- to taste)
    1/4 c sugar
    dash of cinnamon
    1/2 Tbs corn starch

    make the topping and set aside.
    melt the butter and add to the crushed graham crackers and sugar, mix well.
    Press mixture into bottom of well buttered dish.

    In pan, add one cup of black berries with sugar, stir and crush some of the blackberries. This will be very juicy, add other cup and bring to simmer. Poor hot berry mixture into pan with crust. Add large dollops of topping ( I like to push some of them down into the berries and have them get covered. Sprinkle lightly with some cinnamon and bake at 350 till golden brown on top. Eat and enjoy.

    Default Savory Meat Pastry

    This was an experiment that turned out really well.

    Chicken and Feta Cheese Puff Pastry.

    1 batch of puff pastry.

    1 large chicken breasts
    1 package of feta cheese
    1 large red bell pepper
    a little Parmesan cheese

    roll out your puff pastry and cut into 4-6 inch rounds, and set aside (keep chilled).

    grill your chicken breast in olive oil, salt and pepper to taste.
    small dice your red pepper, no larger than 1/2 in squre. smaller is better.
    add to chicken and saute for a few minutes till chicken is done.

    mix chicken and peppers with the feta cheese in a large bowl. add apx 1/4c of parmesan cheese. mix well. let mixture cool completely. Take your puff pastry rounds and add 2 heaping TBS of chicken mixture to the center. Egg wash the edges and place another round on top. gently press edges together, but dont crush dough too hard. Egg wash whole pastry and cut slits to vent on top. Bake at 350 till golden brown and tall. Pastry should puff up. This should be flaky and moist. enjoy. This makes a great snack or a substitute for a sandwich in a lunch. You can make larger ones that can be a whole meal by itself.
